Chinese Fried Rice with Curry Nyonya


What is the different between curry nyonya and indian curry..I guess maybe the thickness...indian curry thicker than curry nyonya but both still has their own specialities. When I was doing some HR Consultant project in local biotech company in KL, I always have my luch at downstairs cafe and I like their fried rice with nyonya curry..when I ask that sabahan waiter (his shoes reminds me of Ahmad Jais n M. Daud Kilau in 80s....kekekekkek), he said.."macam masak kari biasa.." hmmm..sound like kedekut ilmu je...never mind...
To complete my mission to cook fried rice and curry nyonya, I went to Mydin Mall...(yeah...,3rd time this week) to get the ingredients that I believe used in making it but I am not so sure what. Then...suddenly I found this instant curry nyonya paste by Brahim..and I decided to try..

Chinese Fried Rice - 30 minutes
3 garlic - smash
1/2 - 1 yellow onion - slices
pepper, salt,
tumeric powder
fish cake slices
1 egg
mixed vege (carrot, green peas, corn - can buy the frozen type)
cooking oil
rice

heat the oil, fry the garlic and onion and fish cake, add in tumeric powder to highlight the colour (a bit only).
add in egg - stir, add in mix vege, salt and pepper
add in rice..stir and you done.

Tips: if you plan to have fried rice as dinner tommorrow, cook your rice extra for dinner today or cook your rice earlier in the morning before you left for work.

Curry Nyonya

Brahim curry nyonya paste
yellow onion - cut it big
chicken
salt
instant coconut milk
carrot/ brinjal / kacang bendi/ potatoes /tomato - you can add all these or either one if you like.
Asam keping

Heat the oil, fry the onion, put in chicken, add in the Brahim nyonya curry paste, add in instant coconut milk - adjust the thickness as you like..
Add in salt, add in asam keping, add in carrot/brinjal/bendi/tomato (last) as you like.

then serve it.....sure best one...


Tips: If you want to add tomato/kacang bendi /brinjal put it last so it won't over cooked, if you want to add carrot and potatoes, put it earlier so it will properly cooked and soft enough.

complete dinner set in 1 hour.




Today's recipe..quite tricky. But, it is all in your mind, if you already know what you want to cook..what you can do just imagine the step, 1st what you want to do, next..next till all done.

To make it easier for you, here.. I will help you to imagineee..what are you going to cook for dinner..complete dinner set with 3 dishes. All you need is 1 hour of concentration.

Prawn masak lemak, telur goreng dadar n Stir Fried spinach.

When you reach home, 1st of all if you haven't defrost your prawn..defrost it under tap water.

Then quickly cook your rice..don't know how!!!..(sigh..)

While waiting for your prawn to defrost, quickly prepare your ingredient for your spinach n masak lemak udang.,

Fried spinach
1) Garlic - as much as you want -dice it...and that's all you need.
2) Of course-spinach, cut it, clean it...how to clean spinach..after you cut it, soak it in large bowl and put 1 tea spoon of salt..this will help to clear up those sand stick to the leaves. Then rinse n tapiskan..

Then put a little bit of oil in your pan, fried your garlic for a minute then put your spinach...stir..stir..if you want to make it a little bit soupy, put boiled water. Why boiled water, because if you put tap water, you need to wait untill the water boil perfectly in you pan together with your spinach, by that time your spinach turn soggy...ok. Don'tover cook your spinach....then you can serve it with fried onion.

Masak Lemak Prawn
1) 3 garlic
2) 3 small onion
3) 3 chilli padi
4) 2cm ginger

all blend together or tumbuk with your lesung batu..

1) 1 lemon grass - smash it
2) 2 daun limau kasturi-sliced it
3) 1 asam keping
4) 1 pack of instant coconut milk
5) 2 potatoes, cut it.
6) half tea spoon tumeric powder

Clean your prawn. You can peel the skin or just take out the prawn's head. Heat your pot, put a little bit of oil, and tumiskan/fry all the things that you have blended. Once you got that nice smells...put the prawn and stir2 until the prawn turn red. Add in tumeric powder. Add instant coconut milk, if you use powder type mix it with warm water first, unless stated otherwise. Adjust the tickeness of the santan/coconut milk. Add in potatos, asam keping, salt, a little bit of sugar and lemon grass. Wait until it boil. You can add cut tomatoes if you want.
Then serve it, sprinkle some daun limau kasturi on it.

Telur Goreng Dadar

This one also don't know how....haiya...
add a little bit of onion, n salt n fry it..

TIPS: If you want to add a little bit of soup to your vege, always use boiled water. Warm water is better since it can fastened your vege to cook..
Plan your dinner early in the morning, if you want to cook prawn and you have prawn frozen in your fridge, bring it out from frozen area and put it in bowl and cover it and put it in other area in your fridge, by the time you get back from work,your frozen prawn ready to cook..no longer as hard as the iceberg...

Spaghetti Bologne 30 minutes...


This is superb...and every busy mothers should know this recipe..Kids love it and it will take only 30 minutes!!

Ingredients:

1) 1 pack of pasta (spaghetti,macaroni, linguini, or what ever lah..)
2) 1 can of prego (green colour) spaghetti sauce
3) 2 tomatos - dice it
4) 1 yellow onion - dice it
5) Garlics as much as you want - dice it
6) Minced chicken, beef - if you can't get any you can use frozen one, worst come to worst just get those that people use to make burger and smashed it.

extra:
1) if you want to spice it up you can have green capsicum - dice it
2) or you can also add button mushroom - you can get those already slice in can.
3) Instant fish fillet with thousand Island souce or mayonnaise.

a) 1st of all, you must boil the water.
b) while waiting for the water to boil - you can cut and dice n smash everything you want to put inside your souce.
c) when the water boil, put 1 spoon of cooking oil, italian use olive oil..welll..we're malaysian, guna jelah minya cap buruh tu..no harm, and put 1 tea spoon of salt. then you can put your pasta in...kacau2...while waiting for the pasta to get soft..you can start preparing the sauce.
d) if you want to have your spaghetti with fish fillet, fry the fish fillet and separate it.
e) Then, jimat punya pasal..using the oil balance from fish fillet, fry onions, and garlic..till your nose smell that nice smell...jangan hangit pulak.
f) Quickly wash minced chicken or beef and put inside together with fried onion n garlic..stir.stir..
g) Don't forget you pasta..if it soft enough..then..toskan dia, use penapis. carefull jgn jadi macam Mr Bean, nanti everything run into your sink..hahahahahha..
h) back to your sauce, add in the prego sauce, kacau2. Add in sugar and salt.
g) Add in dice tomatoes, mushroom and capsicum if you want.
h) Cook untill it blendall together, if you use beef, later on you can see some kind of oil floating dekat you punya sauce..
i) is suppose to taste sweet sour.

Then ..serve it with mozarela / parmesan cheese and pepper if you want. The fish fillet can serve with thousand island or mayo..sedap..try lah.

Sup tulang simple



Most people like to eat sup tulang..but thinking about how long we have to boil it to make it soft enough make us fell...haaaa (sigh!). I will give tips to you how to make simple sup tulang for your dinner, tommorrow.

So, this afternoon after you came back from work..you can buy the tulang. Then you came back, wash it n boil it..Api kecikkkk jer....cover the pot, slightly open it. Then you can do other things, let them boil and swith off before you go to sleep.

Then, tomorrow morning, after you wake up 1st thing you do, before you go into the toilet is to reheat n reboil the soup add some more water to it. Let them boil. Don't forget to off the stove before you're leaving for work.

After you came back from office/work today, reheat your sup tulang, of course add water to it and make sure you have all these:
a) 1 sup bunjut tulang - ADABI
b) daun sup, bawang goreng, cili merah, cili padi - all chopp
c) ginger, yellow onion, and garlic - smash them

if you can't find sup bunjut ADABI, then you just use 1 cinnamon, few bunga cengkih n few bunga lawang.

Then heat you favourite pot, put a little bit of oil and put your smashed onion, ginger n garlic, if you don't have sup bunjut then put item (c) and fry them untill you can smell that niceee smellss..

Then, you put all the things that you have fried into the other pot (pour it)that containing your sup tulang...if you have sup bunjut, put it together. Let them boiled, add salt, aji no moto a bit and assam keping. Then let them boiled untill you ready to have your dinner..add water if it dry up. Don't forget to kacau2/stir.

Chopped cili api, add soya souce / kicap with limau nipis juice this can give extra taste to your sup tulang...you can eat your sup tulang with nasi, mi kuning, bihun, etc...Sprinkle some daun sup, bawang goreng n red chilli to make it look yummy.

try lah..your husband n kids will love it....

Tips of the day: When boiling sup tulang keep adding water and cover your pot but let it slightly open, this is to keep the hot steam. Unless you have that high presurre pot than, use that one. Don't waste your time by slowly cutting and slicing your onion, garlic and ginger..just smash it. Wash it first before you smash them so the original juice inside won't run with your tap water..

Hello there...

Ok..I know you are very busy. But..you still have time to blog hopping and you come accross mine, maybe..blog hopping for the sake of releasing your stress..ya..that's good. Or, maybe you are thinking..what are you going to cook for dinner..and you can't find any that really fast..No worries..Sis..you come across good one.. this blog will help..

Why I am creating this blog..because..I am like you. I like t cook, butttttt....I have no time orrrr..too busy, orrr..to lazy...ya..sort of.

This blog will give you ideas how to cook in no time..easy..but delicious..so you can be perfect super woman..housewife, mothers, workers..ok.

I'll start with my simple recipe in a moment but for now, I want to go to my favourite market (Mydin Mall in USJ)...to shop, then I'll share my secret with you.

Tips of the day:
1) things that must have in your fridge..for the sake of making your just cook food looks delicious , red tomato, cucumber, salad, red chillies and daun soup n daun bawang..oh...sorry..lost in translation.
